Vitamins & Minerals

1     Have you ever seen a video of toppling dominoes? There may be tens of thousands of dominoes laid out in an elaborate design. With a gentle push, the first domino falls and knocks down the second domino, then the second domino falls and knocks down the third domino, and so forth. The entire chain reaction happens so fast that we cannot blink or we'll miss it. But the whole event could come to an abrupt halt, all because a single domino was not lined up properly!

2     We can think of vitamins and minerals as dominoes in a complicated process of chemical reactions critical in maintaining good health. If certain vitamins or minerals are absent, important biochemical processes can break down, sometimes causing devastating effects.

3     Scientists categorize vitamins into two groups - fat-soluble and water-soluble. Fat-soluble vitamins include vitamins A, D, E, and K. As the name suggests, fat-soluble vitamins dissolve in fats and require fats for absorption. Hence, we can obtain fat-soluble vitamins from foods that contain fats. If we have excess fat-soluble vitamins, we store them in our body fat.
