Food Scientist
By Cindy Grigg

1     When you walk through a grocery store, do you ever marvel at the variety of all the different foods available to you? Do you ever think about all the scientists who helped create all the food on the grocery store shelves?

2     Food scientists apply scientific concepts from physics, chemistry, biology, and health to the production and preparation of food. They are concerned with all aspects of food, from taste and nutritional value to packaging and food safety.

3     Some food scientists are mostly interested in the taste and "mouth feel" of foods. "Mouth feel" is a term that describes the texture of food when you have it in your mouth. Food scientists have found that high-fat foods usually have a very good mouth feel. Because it is not healthful to eat too many high-fat foods, food scientists have tried to develop low-fat foods that have a good mouth feel.
